Airfix Henschel HS123 in 1/72nd and an an Italeri in 1/48th easy build and no rigging or if you can find one Airfix Roland C11 for the same reasons.

Thanks for all the suggestions folks, I've picked up these two from my LMS thus far - although I shall pick up some others.

I quite fancy having another go at the old Matchbox biplanes too.

I'd highly recommend the Fine Molds 1/48 Ki-10 Perry. It's the easiest biplane I've ever built when it comes to aligning the struts and the top wing, and the rigging is very simple.
